To me, fall equals pumpkin baking, and here is an easy recipe you can use for bread/cake or muffins. I would recommend doubling the recipe, since this freezes well.
Pumpkin bread
Makes 1 loaf
3 cups flour
2,5 tsp baking soda
2 tsp salt
2 tsp cinnamon
2 tsp nutmeg
2 cups pumpkin puree
2 cups brown sugar
1 cup buttermilk
2 eggs
1/4 cup soft butter
Sift and mix all dry ingredients.
Add the rest of the ingredients.
Bake on 175 C for about 1 hour for bread.
I found this recipe on Allrecipes.
PS. This is perfect with salted buttercream frosting.
